Description
I saw in the magazine "Only" a very interesting recipe diet zapekanki of aubergine, peppers and pesto. Made adjustments, embellished it and made a great vegetable snack cake. Help yourself!

Cooking
Eggplants remove skin.Pepper from seeds, cut into 4-6 oblong piece, with the inner sides well and season with salt and pepper, and as if to RUB in them.
Slice as thin as possible (I use shredder, slices almost transparent). Add salt, stir and leave for 20 minutes.
Prepare pesto. The classic use for Basil, but I like a mixture of Basil, parsley, dill in equal proportions.
Greens, garlic and nuts grind in a blender.
Add the grated Parmesan and olive oil, whisk well.
Form brush with olive oil, lay slices balaganchika, a layer of pesto,cheese sauce.
Spread the peppers, sauce again, eggplant-pesto-sauce-pepper sauce.
Top all neatly closed with eggplant. In a hot oven 180 C for 25-30 minutes.
Remove, when cool turn over on a dish, cut into slices and treated.
But I have no ukrashatel can't!!! So I greased everything lightly cheese sauce, protrusile grated cheese and decorated with vegetables. Now Bon appetite!!!
