Make the dough. Let's warm the cream with butter and 100g of chocolate. Heat, stirring, until chocolate is completely dissolved. Once the chocolate has dissolved, remove from heat. Separately whisk the eggs with the sugar. Add in the chocolate mass. Mix well. Add flour and starch, stir. The dough pour in the form greased with butter and put in oven for 30 minutes, baked at a temperature of 220*C

Soak gelatin in cold water and leave to swell. 400 ml cream (better to take a fatter) is heated. Add them in the mashed pears, and then gelatin. Mix well to completely dissolve the gelatin
