Description
This vinegar is extremely soft and flavorful. Perfectly suited to salads, to cheese, it is the perfect base for different stations. Can be prepared from any fruit, especially now is the season!

Cooking
Pour the currants into a bowl or jar, add the finely chopped thyme, pour Apple cider vinegar.
Good to suppress press puree. Cover and leave in the refrigerator for 5 days.
Set the sieve over a clean bowl, cover it with gauze in two layers, pour the vinegar with currants and leave to drain overnight.
Add the sugar. I took brown sugar TM Mistral.
Pour the vinegar and sugar in a saucepan, slowly heat to sugar is dissolved, then boil for a few minutes, removing the foam.
