The recipe for this soup I read in the magazine "School of Gastronome". He is interested in me. Recently prepared. And, indeed, the soup is very tasty and flavorful (IMHO).

Cooking
First, boil the chicken broth. So, how do you do it usually. In it, of course, add the onions and carrots. Well, and salt to taste. Is the number of products we need 1 liter of broth, my broth was ready.
In a ready broth, add the rice and cook it until ready.
Separately, prepare the apples. Their peel and grate on a coarse grater. Put the apples in a pan (not broth and other), pour a small amount of water and boil until soft apples. It won't be long - 5 minutes, maximum 10.
From cooked apples make puree (liquid drained).
Sour cream, beat well with egg yolk.
Prepared mashed potatoes added to the broth with rice. Bring to the boil, season with curry.
After this filling soup creamy yolk mixture. Mix well and bring to a boil. But do not boil!!! Of course, try it on salt. All soup is ready. Pour into a bowl and add the greens.
