Awesome smoky taste of the soup gives the sausage "Hunting Cherkizovsky" and the use in the preparation of soup dairy sausage makes the soup softer and more richness.
I used to make this soup specially brewed beef broth on the bone, but in the new year in the fridge usually present broth from chicken Breasts or meat, cooked on a salad, you can use any broth. The meat is removed from the finished broth and cut into small pieces, strain the broth and return to saucepan.
Prepare the ingredients. I used a stem celery with a gorgeous greenery. Thick stems for the broth, and greens and thin stalks for soup.
Coarsely chop thick stalks of celery. Boil the broth, add the stems and cook for about 20 minutes until soft. Stems removed and discarded, thanks to celery broth produces awesome flavor and taste.
Finely chop the sausage, meat, grate the carrots and, for lovers of spicy, sliced fresh chillies. Put all meats into the boiling broth. Cook for about 10 minutes, until soft carrots.
Add to the soup pickled onion and pepper, put in the soup sausage and squeeze a couple tablespoons of lemon juice. Cook for another 5 minutes.
Add the chopped greens celery, bring to boil, cover and turn off heat. Let the soup to infuse for about 15 minutes.
When serving, add to bowl olives, herbs and lemon wedge. Very appropriate to dry to the soup croutons. Bon appetit!
