I really wanted to cook the meat, marinated in a spicy adobo sauce, which is very popular in Andalusia, and in the old days, when there were no refrigerators, served in such a natural preservative to preserve meat and fish. Add sliced peeled eggplant and simmer for 5-7 minutes (if the eggplants taste bitter, they need salt, leaving for 30 minutes, and then rinse with cold water and squeeze)

Tomatoes peel and cut into pieces, I simply rubbed on a grater. Add to vegetables and simmer over medium heat, stirring constantly. Cover to cover and allow to fully evaporate the liquid.
