Cooking

step-0
Cereal grind.
step-1
Dates blend in a blender until smooth, adding coffee. Put on the heat and bring the puree to a boil. Pour the soda. The mixture immediately turns into a thick foam.
step-2
Remove from heat and add ground oatmeal. Mix well. The batter is thick but feels sticky.
step-3
Bake for 10-15min at 180C (my oven is very "fries", so put on your oven 10 degrees less than recommended). I have a silicone mold, to help me bake the "fingers". If you have these molds, you can bake a whole layer and then cut it into wedges. The cookies can have a faint smell of baking soda. But as it cools down it goes away.
step-4
Low fat cheese is usually creamy. If not – then it should wipe through a fine sieve. I did not.
step-5
As the cheese is fairly dense structure, I decided to "dilute" it with Swiss meringue. If you live diet-diet take curd "thinner" and just mix it with mashed dates. I love Swiss meringue! In a Cup mix protein, sugar and water. Put on a steam bath, and a little stir so the sugar is completely dissolved. Once that happens, remove from heat. In a pan with a pre poured cold water put the bowl with the protein and begin beat with a mixer, gradually increasing speed. Beat until strong peaks. In my kitchen, never anything smoothly passes! Whisk from my blender-pensioner refused to whip the protein. Churned by hand, felt like a second wind. But the whipping turned out just to medium peaks.
step-6
Cheese spatula, gently beat in 2/3 Swiss meringue (focus on your taste, you can stir less and meringue).
step-7
Vystelim the mold with cling film. On the bottom spread a little ricotta. "Fingers" dipped in coffee and pour into the mold.
step-8
Next - a layer of cheese. On the cheese place a layer of jam. And again – "fingers"-cheese. The mold you could put away in the freezer.
step-9
For topping – a little jam and a few tablespoons of water to warm up in a pan, bring to the desired consistency. Remove from the freezer form with dessert and pour the topping on top of the jam.
step-10
From this quantity of products obtained a dessert of small size, weighing about 420-450g. This is about 4 servings.
