Vietnamese tomato soup
Very tasty, rich and thick tomato soup with rice, mussels and Basil. Try it ;)

Ingredients

  • Figure

    100 g

  • Onion

    1 piece

  • Carrots

    1 piece

  • Tomato

    1 piece

  • Tomato juice

    125 ml

  • Water

    0.5 l

  • Dry white wine

    100 ml

  • Sugar

    0.5 tsp

  • Mussels

    200 g

  • Basil

    0.5 coup

  • Garlic

    2 tooth

  • Salt

  • Black pepper

  • Vegetable oil

    4 Tbsp

Cooking

For this dish I used a rice "Indica" TM Mistral.

Onions finely chop, carrots to grate and fry in 2 tbsp oil.

Add tomato juice and chopped tomatoes (without skin), cook, stirring occasionally, 5-6 minutes.

Remove from heat, cool slightly and grind using a blender. Spread tomato-vegetable puree into a saucepan, add water, bring to boil and cook on a slow fire.

Meanwhile, the remaining vegetable oil to fry the rice for 2 minutes, then pour in the wine, add sugar and cook 5 minutes, until the alcohol has evaporated.

Add the rice to the pot of soup, bring to boil, cook for 10 minutes.

Then add the mussels, chopped garlic and Basil. Season with salt and pepper and cook about 10 minutes.
