Jelly red currant
Just with tea, a muffin or cake decorating, a very good fit is jelly of red currants.

Ingredients

  • Red currants

    2 kg

  • Sugar

    1.2 kg

  • Water

    400 ml

  • Lemon juice

    4 Tbsp

Clean the black currants and berries to separate from the brush and wash afloat in cold water.

Berries RUB through a sieve. But I rubbed through cheesecloth.

The juice and sugar mix, warm on low heat until the sugar is dissolved.

Mashed berries add small portions of syrup, stirring well each time.

Bring to a boil, add the lemon juice, mix well.

Spread the jelly into hot, dry sterilised jars. Cool, sealed the jars.
