Caviar of eggplant
Favorite childhood dish. Offer your own version.

Ingredients

  • Eggplant

    1.5 kg

  • Onion

    1 piece

  • Pepper

    2 piece

  • Garlic

    1 tsp

  • Tomato paste

    2 tsp

  • Sugar

    1 tsp

  • Salt

  • Spices

  • Vegetable oil

Cooking

Boil the eggplant with the addition of 1 tbsp of salt until soft, even a bit to digest. Spread on a Board, leave to cool.

Onion, pepper cut into small cubes

Fry in vegetable oil on low heat until soft, approximately 20-25 min., stirring occasionally.

Finely chopped with a knife

Put in sauce pan, mix well, fire a little more

After about 10 min. add salt (1/2 tbsp), garlic (if you take heart, it need a small slice). Add the spices (I have black and white pepper, Basil, oregano). If you like more spicy - add 1/4h.l. curry. Stir.

Add tomato paste, stir. Then the sugar and stir.

After 2-3 minutes turn off the heat - the eggs are ready! Bon appetit!:rose:

Served with meat, mashed potatoes or simply spread on bread.
