Cooking
Potatoes wash, peel and cut into cubes.
Leek wash, cut into rings. Onion peel and cut into half rings.
In food processor add both types of onions and grind
In a large saucepan heat the oil, add the chopped leek, onion and garlic, fry on low heat for about 8-10 minutes, stirring occasionally. Add cumin, coriander, nutmeg, salt, broth and potatoes. Bring to a boil, reduce heat and simmer until the potatoes are done, about 20-25 minutes.
Remove from heat and blend in any convenient way.
Return to the heat, add the cream, lemon juice and soy sauce (I added sweet soy sauce TM Kikkoman), bring to boil and remove from heat.
Parmesan (or other hard cheese) to grate on a coarse grater.
All ingredients for spicy mint sauce to add to the food processor and punch to the consistency of a smoothie.
Soup pour into a bowl, add a couple of tablespoons of mint sauce, Parmesan, sprinkle of fresh cilantro and red pepper. Bon appetit!
