Potato croquettes stuffed with chicken
Full great snack for adults and children

Ingredients

  • Potatoes

    500 g

  • Chicken fillet

    250 g

  • Chicken egg

    2 piece

  • Bow white

    1 piece

  • Parsley

  • Olive oil

    2 Tbsp

  • Butter

    1 Tbsp

  • Broth

  • Black pepper

  • Salt

  • Bread crumbs

    4 Tbsp

  • Yogurt

    200 g

  • Cucumber

    1 piece

  • Garlic

    1 tooth

  • Mint

  • Lemon juice

Potatoes wash, boil in the skins until tender. Fillet boil with salt added.

Olive oil with added butter fry the finely chopped onion. Slice the chicken into very small cubes. Fry together with the onion. Add a little chicken broth, chopped boiled egg and greens. Season with salt and pepper. Cool.

Dry the bread in the oven. Grind in a blender to crumbs.

Boiled potatoes peel. To cook from it puree. Season with salt and pepper, add a little chicken broth and raw egg. To make the mashed cake into the middle of the tortillas spread a spoonful of stuffing to sculpt the edges, roll into a ball. Roll in bread crumbs. Bake in the oven at 210* 20 minutes.

Served the croquettes with a refreshing summer sauce a La tzatziki and fresh vegetables. For the sauce grate the cucumber and garlic clove. Add 200g of yogurt, chopped mint, lemon juice, salt, ground pepper to taste. Mix well.
