Vegetable soup with sour apples
Unusual, low-calorie, but very colorful and delicious soup. You can cook vegetable soup without meat with vegetable oil, and the meat broth. The recipe is not complicated.

Ingredients

  • Water

    2.5 l

  • Apple

  • Cabbage

  • Pepper

  • Onion

  • Tomato

  • Carrots

    70 g

  • Celery root

    50 g

  • Potatoes

    200 g

  • Garlic

  • Greens

  • Sugar

  • Salt

  • Black pepper

Wash vegetables and clean.

In vegetable oil fry the carrots and celery, chopped fine strips. Remove in a bowl.

In the remaining oil fry until Golden brown chopped onion. Remove in a bowl. If you decide to cook soup with meat, add in a pan a little oil and fry until Golden brown the meat, cut into wedges or cubes, 300 grams.

Shred cabbage, peppers cut into strips, potatoes – in small cubes.

Broth or water bring to a boil. Omit the potatoes, again bring to a boil and cook over low heat for 5 minutes.

Add browned vegetables, cabbage and pepper, after boiling, salt the soup and cook on low heat for 10 minutes.

Meanwhile, clean the apples and remove the core. Chop the apples and tomatoes into thin slices.

After a time add in the soup apples and tomatoes and cook for 5 minutes. Turn off the heat. Bring the soup to taste with salt, sugar. If there is not enough acidity, add a pinch of citric acid. Add pressed garlic, cover and let the soup to stand for 20 minutes.
