Eggplant salad
Very easy and quick to prepare salad vegetables and quite tasty. Maybe there are such on the website, then I will remove the recipe.

Ingredients

  • Eggplant

    4 piece

  • Tomato

    3 piece

  • Onion

    1 piece

  • Garlic

    2 tooth

  • Sesame

    2 Tbsp

  • Dill

    1 coup

  • Parsley

    1 coup

  • Cilantro

    0.5 coup

  • Mint

    4 piece

  • Olive oil

    4 Tbsp

  • Sugar

    1 tsp

  • Vinegar

    1 Tbsp

  • Salt

Eggplant cut into 2 halves in length and boil in salt water until soft 5-10 minutes (depending on the size of the eggplant), but not to digest.

Drain the water through a colander . Leave the eggplant in the colander for 15 minutes in order to leave the excess fluid.

Allow to cool and peel. Onions cut into half rings and marinate in balsamic vinegar. Chop the garlic, all the chopped greens. Sesame seeds, after fry on a dry pan.

The cooled eggplant slice crosswise . Tomatoes cut into cubes.

Combine all the ingredients and season with olive oil. Sometimes in a salad, add bell peppers raw , cut into strips . The salad needs to stand a little in the fridge. This taste will win.
