Very simple to prepare and very unusual dish that will decorate any table. Down with trivial cuts of store-bought sausages from "stuff". Despite the long cooking time, the main part of it is the marinating and the roasting, so that together we can do something else or just relax :) Author's recipe of the finalist of season 1 of the show "Master chef" in Ukraine Igor Misevich, a wonderful chef and just a wonderful person :)

Cooking
Knuckle my broblem. Carefully, trying not to hurt the skin, remove the bone. Mix all ingredients for the marinade, heated it up to 36.6 degrees (body temperature). Shank pour the warm marinade and leave at room temperature for 1 hour.
Mushrooms cut into 5-10 mm cubes and fry. Sprinkle with salt and pepper to taste. Important: the first mushrooms to fry in a dry frying pan when evaporated all the juice that they are empty, add oil and fry 3-5 minutes.
Separately fry chopped onion cube.
Raspberries, if it's fresh, put on an hour in the freezer. I have frozen.
Knuckle saivam with narrow, stuff mushrooms with onions and raspberries, close to the widest part. Wrap in foil and bake at 160 degrees for 2 hours (we finished the shank at a puncture stands out clear juice).
Open the foil, set the temperature to 250 degrees and bake for 10 minutes for Golden brown.
Allow to cool, remove the skin and enjoy
In the context of. Thanks to the marinade the meat becomes soft, and the filling gives incredible taste and aroma. Try it, it's insanely delicious. The author of the recipe is a sauce to the dish in a blender mix the raspberries and mix with the juice, which is released during baking.
