Eggplant
This recipe was given to me from my grandmother-Cossack. Who loves spicy, he will appreciate the taste of eggplant.

Ingredients

  • Eggplant

  • Pepper

    3 piece

  • Onion

    5 piece

  • Garlic

    9 tooth

  • Salt

  • Vegetable oil

    0.5 cup

  • Vinegar

    0.5 cup

Boil the eggplant for 10 minutes (important not to tenderize them). Drain and allow to cool.

Cut the vegetables: eggplant - rings, peppers and onions - half-rings, garlic grind.

Put the vegetables in a pan in layers: eggplant - salt and pepper (a pinch), sprinkle with onion and garlic, then pepper, etc.

Pour oil and vinegar (1:1) so that was covered the last layer. Cover with a lid and put in the fridge for 2-3 days. "Blue Cossack" is ready. This dish is a great addition to the potatoes, and barbecue.
