Ingredients

  • Pork

    600 g

  • Bread crumbs

    2 Tbsp

  • Vegetable oil

  • Lemon peel

    1 Tbsp

  • Chicken egg

    1 piece

  • Spices

  • Parsley

Pork fillet cut into thick slices and tie with cooking or ordinary thread, folded in several layers, giving the medallions round shape.

Fry in ghee (vegetable, olive) oil for 3 minutes on both sides, season with salt and pepper and put in ovenproof form

Mix the breadcrumbs, egg and zest of lemon (I had lime), add a few sprigs of chopped fresh parsley

Put the mix on the medallions and bake in the oven at the function "grill" or on high for 5-8 minutes (until it will turn brown "cap")

Serve with vegetables and garnish will suit boiled pasta, mashed potatoes or steamed vegetables.
