Cut into small dice pineapple and finely - green onions (best of - bow-used - 5-8 feathers). ***About pineapple: if you freeze the peeled quarter of a large pineapple, then after defrosting they lose their "masochist", and very convenient to use for this kind of salads without resorting to canned and sweetened alternatives.
Shred the iceberg lettuce and slightly mash.
Put the salad in a salad bowl, add pineapple, onions, canned and rinsed (or pre-boiled) white beans.
Dressing: mix 2 tbsp low fat soft cheese, 1 tsp sweet mustard and 4 tbsp of soy sauce.
Add dressing to salad bowl and mix gently. Attention! Season the salad just before serving!
Add 2 tbsp of grated cheese, mix well.
