Rice with peas
Risi e Bisi. This is a simple and at the same time a tasty dish impresses me with its practicality and speed of preparation! Kids just love it... by the WAY, "Risi and BisI" can be prepared in advance. Of course, as it cools down, the rice absorbs all the liquid and becomes thick. But, you can at any time allow it to warm up, diluted with additional hot broth (advice from Italian chefs). This recipe will help out busy moms!

Ingredients

  • Brisket

    100 g

  • Onion

    1 piece

  • Broth

    1.5 l

  • Butter

    40 g

  • Green peas

    250 g

  • Parmesan

    50 g

  • Salt

    0.5 tsp

  • Black pepper

    1 pinch

  • Parsley

    1 Tbsp

An important condition for the preparation of this dish it is best to use a delicious homemade chicken soup! So, to cut a medium-sized breast (or ham) and chop the onion.

In a wide saucepan, melt the butter and saute the onions.

Once the onions are slightly brighten, add to it chopped brisket.

After a couple of minutes add the rice. Stir and let the rice for another couple of minutes to soak up the flavors of the onion mixture.

Then add green peas. Season with salt and pepper. I almost always use frozen peas, though in the spring you can take and fresh (as in the original recipe)...

Pour part of the hot (!) broth. Continue to cook the rice, adding as necessary the hot broth, until the rice is ready, about 16-18 minutes. In fact, the cooking technique for this dish is similar to cooking risotto! But, the result is a more liquid consistency.

The most important thing "Risi and BisI" should not resemble a thin soup! In General, it is a cross between soup and risotto! The finished dish serve immediately, sprinkling the dish with finely chopped parsley, a sprinkle of olive oil and sprinkled with grated Parmesan cheese!
