Eggplant baked in tomato sauce
A delicious dish of eggplant, cheese and spicy tomato sauce.

Ingredients

  • Eggplant

    2 piece

  • Tomatoes in own juice

    240 g

  • Olive oil

    1 Tbsp

  • Garlic

    2 tooth

  • Thyme

    0.5 tsp

  • Oregano

    0.5 tsp

  • Black pepper

    0.25 tsp

  • Salt

    0.5 tsp

  • Mozzarella

    50 g

Cooking

Eggplant cut into discs with a thickness of 0.5 cm, fry in a dry grill pan (in salt water not soaked).

Tomatoes cut into cubes, season with garlic, fresh herbs, olive oil, salt and pepper. Optionally, you can pass the sauce through a sieve so that the texture of the sauce was homogeneous and free from pits.

To create dish: eggplant - sauce - cheese - eggplant, etc.

Bake without covering with foil at t 200 gr. 20 - 25 min. (time depends on the oven).
