Eggplant caviar with walnuts
Surely, almost everyone has their own recipe of eggplant caviar, today I propose to prepare such eggs in the oven with the addition of sauce-Teriyaki marinade, which gives an incredible taste and aroma. Also, I like to add in eggs walnuts, which, in my opinion, beautifully complement and make it even more intense.

Ingredients

  • Eggplant

    400 g

  • Carrots

    100 g

  • Onion

    100 g

  • Pepper

    100 g

  • Tomato

    150 g

  • Walnuts

    100 g

  • Sauce-marinade

    3 Tbsp

  • Salt

    0.5 tsp

  • Black pepper

    0.25 tsp

  • Peppers red hot chilli

    0.25 tsp

  • Olive oil

    50 ml

Cooking

Eggplant is good to wash.

Cut into cubes. Then place them in cold, salted water for 20 minutes, to go the extra bitterness.

From eggplant to drain the water and place them in form (I have silicone), pour the olive oil, mix well and put into the oven preheated to 200 degrees.

Meanwhile, peel the carrot, wash and cut into cubes. Open the oven, put the carrots to eggplant, stir again and close the oven.

Peel the onion, wash, cut into cubes and add to eggplant with carrot. Mix well.

Bulgarian pepper to clear of seeds, wash and cut. Add to vegetables, mix well.

Wash tomatoes, cut into cubes, add to vegetables, mix well.

Then the vegetables and season with salt and pepper and add the sauce-marinade Kikkoman Teriyaki.

Mix well and cook in the oven at the same 200 degrees for 20-25 minutes, occasionally stirring.

After 20-25 minutes, walnuts crushed, but not into crumbs and add to eggplant caviar, mix well. P. S. optionally, you can chop the eggs with a blender, but I prefer slices.
