Cooking
Pig's ear, put in a large pot, cover with water, add whole carrots, onion, rosemary, celery, Bay leaf, pepper and cook for about 2 hours. Cooked ear should be wet paper towel.
For the glaze, combine the soy sauce TM Kikkoman, honey, mustard and Tabasco sauce.
Lubricate the ear with glaze and bake in the oven at 190 degrees for about 60 minutes (it may take more time). Every 20 minutes, re-cover the ear with frosting to get a Golden crust.
Potatoes clean and boil until tender.
Blend, adding warm milk and butter.
Add wasabi and sliced pickled cucumber. Mix thoroughly.
Apply ear together with mashed potatoes.
