Cooking
To prepare the products
Couscous pour boiling water with salt
Cover with a towel or lid and leave to rot, approx. 5-10 min. (water should be fully absorbed)
Peel the onion and garlic, cut into strips. Fry in hot olive oil until soft, add 2 pinches of sugar
Add the tomato paste (not sour! or decrease its number to 1 tsp.), mix
Add the cherry tomatoes cut in halves, roast on medium heat for approx 4-5 minutes, stirring a couple of times. ***Warmed tomatoes secrete a particular substance - lycopene, which is cancer prevention. The greater number of lycopene is in the cherry tomatoes. And the addition of olive oil, doubles the absorption. "Lycopene protects cells from damage, but also reduces the number of "bad" cholesterol, thereby reducing the risk of cardiovascular disease. "
At the end salt and pepper
In the swollen couscous, add 1-2 tbsp olive oil, stir so the grains separated from each other
Add parsley and roasted tomatoes, mix gently
Crumble the fitaki (the number will depend on the saltiness)
Optionally, you can top the salad with lemon juice, to taste
