Baked a cake this morning, and at lunch we tried. Let's make poppy seed dough: whisk 5 eggs 175 g sugar until frothy.
Add the poppy seeds, stir. Here I have a Mak - ground, dry, weight 200 gr.
Sift flour with baking powder, whisk. The dough is ready.
On the baking paper spread the dough in a thin layer. I have a circle of 24 cm in diameter, took 4 tbsp of the dough. Get 4 Korzh.
Bake in a preheated 200*C oven, for about 10 minutes each cake.
While the cakes bake and cool... wash and peel strawberries. 1/3 of the strawberries and some beautiful berries lay off.
To the remaining strawberries, add 75 g sugar and lemon zest (I have Citro-Back), turn the blender to puree.
Sheet gelatin soaked in water until soft, squeeze, mix with a small amount of the strawberry puree, put in the microwave for a few seconds at low power to gelatin is fully dissolved. Then add to the main mash. Put in the cold.
Whisk the cream to soft peaks, the cream should be mixed to a solidifying puree. Sent in the cold.
The remaining 1/3 of the strawberries cut into arbitrarily. Cakes have cooled, the cream is cooled. Collect the cake in the shape with the split edges: each cake liberally covered-cover with the cream, and top with the strawberry pieces. Top cake just pour the cream and send the cake in the cold.
When the top layer of cream will podstine, decorate the cake with strawberries and white chocolate (shot knife chips :) ) + a bit of chopped pistachios on top. And again send in the refrigerator before serving.
Before serving, hold the knife between the wall forms and the cake, remove the form,
