Somewhere in the woods for the first mushrooms to appear. One of my favorite mushrooms — chanterelles. By the way, these mushrooms are great for the fact that the "know how" to protect themselves from parasites. Very rare to see worm-eaten Fox. Today's dish is dedicated to all like — minded lovers of fungi in General and mushrooms in particular.

Cooking
Chanterelles wash in cold water, trying to clean up all the trash and the earth.
Throw into boiling salted water and ovarium 1 minute. This will allow you to remove the excess acid from fungi.

And now a special step for pyromaniacs! Ignites a pair of cognac (not trying to start a fire in the kitchen, don't singe eyebrows, bangs and chest hair) and leave to burn for a few seconds, then extinguish by covering with a lid and turn off heat.
The rolled out circle of dough put in a refractory form, greased with butter. The form must be in diameter a few inches less than the circle of dough. This will allow us later to close the cake from the sides.
Spread on the batter fried mushrooms.
Sprinkle with salt and pepper to taste.
Goat cheese grind on the middle pieces.
Sprinkle mushrooms and cheese.
Rinse the herbs and finely chop it. Can take any to taste (dill is not advised). I had Basil and tarragon.
Chopped greens sprinkle with the filling.
In a bowl, whisk eggs with cream, can be a little salt and pepper.

And finally, bend the edges of the dough so that the pie turned out closed on the sides and open in the center. Put in oven at 210 degrees for 30 minutes.
