Cooking
Pour 2.5 liter cold water, put the washed duck. Onion wash, cut in half, peel from the husk. Add in the sliced onions, branches of celery and a piece of carrot. Bring to boil, remove the foam, cook for 30 minutes. Cooking time depends on the quality of duck meat.
Remove onion, carrot. Possible strain the broth. Put washed rice and cook for 15 - 20 minutes. Potatoes peel and cut into cubes. Add to the pot. Salt. Cook for 10 minutes.
The second onion peel and chop. Carrots cut into bars. ( in the soups I like medium sliced vegetables, if You don't like, grate carrots on a coarse grater). Vegetables to put in soup. To cook on.
To prepare the spices, wash, dry and chop the parsley.
Tomatoes wash and chop finely. Spread it all into the soup, add soy sauce. I use sweet TM Kikkoman, it is the addition of soy sauce reduce the fat content of the soup and will further enrich its taste.
Give writing a rolling boil and remove from heat. 10-15 minutes the soup should infuse. Before serving, remove the branches of celery.
Duck to get out of the soup, cut into portions.
