Vegetable soup,
This dish is reconstruction of the usual vegetable soup early 17th century. This soup is still brewing on the streets of Geneva during the festival "Escalade". The modern version differs from the original in the direction of simplification, however, in this recipe that will not speak.

Ingredients

  • Turnips

  • Cabbage

  • Spinach

  • Lentils

First, you need to cut into rings white parts of the leeks, and the onions - the wide half-ring. Smoked brisket cut into large chunks. Spread on a heated pan a piece of butter and then put both onions and grudinku.

Coarsely cut vegetables: carrots and parsnips - the wide half-ring, turnips and celery, diced, cabbage - in wide strips, without disassembling the head into individual leaves.

Put the chopped vegetables into a suitable sized pot, fill with water and leave to boil over high heat.

Once the water in the pan boils, add 2 tablespoons of lentils and diminish the heat to medium.

Ten minutes later add our fried bacon, onion and leek.

After another ten minutes add chopped fresh spinach. After 15 minutes, then turn off the heat and leave the soup to infuse for 5-7 hours.

Served hot with chunks of black bread. Bread can and chop in a bowl of soup, as is often done during the holiday on the streets.
