Cooking
Preheat the oven to 200 gr. The pan or form for baking vystelit baking paper. Put her tomatoes and onions. Drizzle olive oil on top, squeeze the garlic, sprinkle with sugar, salt, pepper. Put in the oven for 20 minutes. The tomatoes should be soft but retain their shape.
Meanwhile, cook rice according to instructions on the package. Let cool to room temperature. Gently mash with a fork to keep grains of rice separated from each other.
Crumble on top the feta cheese, add the nuts, parsley, tomatoes and onions. Season with salt and pepper. Drizzle with 2 tbsp oil and mix gently. If parsley replace the Basil will be even tastier.
Serve the salad at room temperature.
