Description
Brik Danouni - Eastern favorite pies, originally from Tunisia, which are prepared with different fillings. I cooked in the simplest traditional option of boiled potatoes, cheese, eggs, greens. The dough for pies is prepared from wheat flour, semolina is a special grind of semolina without eggs. Cakes turn out very crispy, and when frying, do not absorb much oil.

12-13 for the preparation of pies we need for the dough 400g of semolina (this is a form of semolina finely ground durum wheat)
In warm water dissolve salt and sugar. In semolina, add the pieces of soft butter, RUB it with the semolina, then gradually introduce the treated water, kneading "fluffy" batter. The dough is very soft and pliable to work with.
Knead the dough, leave to rest for 20-30 minutes.
For stuffing use ready-made products: boiled potatoes, eggs, pre-fried onion and parsley - 2-3 tbsp Eggs PS you can replace canned tuna in its own juice.
Grate on a coarse grater potatoes, eggs, cheese, add chopped parsley, fried onions, season to taste.
Divide the dough into equal pieces, roll into balls the size of a date
Flatten ball into a circle, basis spread on top half of the dough 1-2 tsp of the stuffing
Cover with second half of dough and seal the edges of the pie with a fork.
Fry patties in a small amount of the warmed vegetable (olive) oil until it will turn brown on both sides
Spread on paper towels to remove excess oil.
