Description
Is the name of a recipe I saw in one of the Greek culinary magazines. Easy to prepare, but tasty chicken recipe with fresh vegetables, although not seasonal, but still available and at this time of year, when the body is in need of support.

Heat 3 tbsp oil and stew it finely chopped onion and garlic, add grated on a grater tomatoes, salt, sugar, mint, and Basil. Simmer until almost complete evaporation of the liquid.
Heat rest of the oil and quickly fry the sliced into 12 servings the chicken pieces. Place them in heat-resistant form.
In the same oil fry the sliced courgettes. Place them between the chicken pieces.
Do the same with the sliced semi-washers, pieces of eggplant.
Pepper not fried placed on top.
And cover all with sauce. Tightly cover the form with foil and bake in pre-heated to 200"C oven for 45 minutes. Be guided by your oven!
Remove the foil and sprinkle the dish with cheese. Bake for 10 more minutes.
The finished dish sprinkle with parsley.
Serve with your favorite side dish. I was eating with black bread.
