Eggplant rolls with tomatoes
Wonderful appetizer with vodka!

Ingredients

  • Eggplant

    400 g

  • Tomato

    250 g

  • Vegetable oil

    2 Tbsp

  • Mustard

    0.5 tsp

  • Mayonnaise

    4 Tbsp

  • Garlic

  • Salt

  • Parsley

Cut eggplant into lengthwise thin strips, add salt and let stand 10-15 minutes to dry. Fry in vegetable oil until Golden brown on both sides. Cool.

Then brush each slice with a mixture of mayonnaise, minced garlic, mustard and chopped herbs.

Put the slice of tomato and turn rolls.
