Cooking
Preheat the oven to 180 gr. Shape size 28*32 cm covered with baking paper. With an electric mixer, whisk 4 egg yolks with the sugar until pale in colour and creamy.
Top sift cocoa and starch, add the melted chocolate (100 g) 2 tbsp. hot water. Mix thoroughly.
4 egg whites beat until soft peaks form.
Pour in the chocolate mass.
Lay on the prepared baking sheet, flatten.
To waikat 12 - 15 minutes until it becomes elastic to the touch. Cool completely on the baking sheet.

Bake for 20 minutes until Golden brown. Allow to cool completely on the baking sheet.
Soak raisins in hot tea for 15 minutes. Then the tea to drain.

Pour hot cream the chopped chocolate (300 g dark + 70 g with a taste of Earl Grey tea) and stir until smooth and homogenous.
