  • Salt

    2 Tbsp

  • Sugar

    1 Tbsp

To purchase a piece of trout (Arctic char, salmon...) for 1 kg weight

Carefully wipe with a napkin (to dry)

DO NOT WASH THE FISH!!! Why not wash - do not know... so says the man who gave the prescription. But if you do not know, anyway, I tried already.

To cut on a ridge, the ridge to remove (leave one fillet)

Mix the salt (2 tablespoons per 1 kg of fish) and sugar (1 tablespoon)
