Cooking
[b]Cakes:[/b] the Chocolate and butter cut into pieces and melt in a water bath until a homogeneous mass. Add the cognac and mix well. Set aside to cool.

Separately, beat egg whites with a pinch of salt, gradually adding sugar, to strong and stable foam.
To the chocolate mass carefully mix 1/3 of whipped egg whites and mix well. Gently add the remaining egg whites and mix until homogenous (No mixing - all by hand!)
Form to cover with paper and grease. (I have a form 26 cm) Pour the batter into the pan and distribute evenly. Send in a preheated 180 degree oven for 30-35 minutes.
The finished cake remove from the oven and allow 15-20 minutes to cool in pan. Remove from the mold and cool completely in the refrigerator. Cut into 2 Korzh. Repeat the entire procedure again (there are 4 layers, not counting the small ones)
[b]Cream:[/b] whip the Cream until strong peaks. Add the tin of condensed milk and stir with a mixer at low speed.
Add sour cream and mix by hand.
[b]Collect the cake:[/b] Cakes to grease impregnation (although it is possible and without it - they are so very soft) oiling each cake with cream, put them on top of each other.

Alternating between cakes to put on the cream the candy and carefully press down the next layer. (1st - with contentcube, 2nd no, 3rd with candy)
Coat with cream top and sides and leave for a couple of hours at room temperature. To remove overnight in the refrigerator. To get and decorate as desired.
