Tomato soup with vegetables and meatballs
I suggest to try rich tomato soup. It is dominated by different vegetables and meatballs, stuffed with cheese. This is a great dish for a cold day that warms and give a few pleasant minutes.

Ingredients

  • Minced meat

    300 g

  • Salt

  • Black pepper

  • Paprika sweet

    0.5 tsp

  • Chicken egg

    1 piece

  • Cheese

    80 g

  • Beans

    80 g

  • Pepper

    1 piece

  • Eggplant

    0.5 piece

  • Onion

    1 piece

  • Carrots

    1 piece

  • Garlic

    1 tooth

  • Vegetable oil

    3 Tbsp

  • Water

    1500 ml

  • Soy sauce

    2 Tbsp

  • Tomato paste

    140 g

  • Coriander

  • Salt

Beans boil until tender, as directed on the package. If there is no time to cook it, you can take the canned beans.

Season the mince with salt and pepper, add the paprika and knead well. Add the egg and knead again a lot.

Grate cheese on a fine grater.

Pinch off some of the mince and form a pellet. In the middle place a little bit of cheese.

To form meatball, carefully hiding the cheese in the middle. To do with all the meat.

Prepare the vegetables and soy sauce.

Small cubes chop the onion and carrots. In a pot heat a little vegetable oil and put onions and carrots, fry until soft.

Cut into cubes bell pepper and eggplant. Put in a pan to passerovannym vegetables. Cook stirring for 3 minutes.

Pour soy sauce to the vegetables and sauté for about 3 minutes on low heat.

Add the tomato paste, season with coriander and cook stirring for 3 minutes.

Season the soup with tomato vinaigrette and cook for a few minutes. Taste and if necessary season with salt.
