Eggplant Szechuan
We in Primorye is very popular dish in Chinese dishes - eggplant in sweet and sour sauce. Offer You version of this dish - eggplant Szechuan. It can be prepared at home as a snack for a picnic, but you can directly into nature, in a wok, over an open fire.

Ingredients

  • Eggplant

    2 piece

  • Water

    100 ml

  • Tabasco

    1 tsp

  • Sauce-marinade

    50 ml

  • Vinegar

    2 Tbsp

  • Dry white wine

    2 Tbsp

  • Sugar

    1 Tbsp

  • Vegetable oil

    80 ml

  • Garlic

    2 tooth

  • Ginger

    1 Tbsp

  • Chili

    2 piece

  • Corn starch

    1 Tbsp

  • Sesame

    1 Tbsp

Cooking

Cut eggplant into large chunks.

Finely chop the garlic, ginger, cook in advance chili.

Pre-cook the filling. For this we need teriyaki marinade Blue Dragon

For teriyaki marinade add water, sugar, sherry, rice vinegar, Tabasco, starch. Mix well.

Eggplant fry until Golden brown in hot oil in a wok for 4 minutes.

Add to eggplant chilli, finely chopped garlic and ginger, mix well.

Pour the eggplant sauce, mix well, saute for 2 minutes until fully thickened.

Eggplant can be eaten hot or as a cold starter. Sprinkle with sesame seeds.
