Cooking
In a pan without fat fry walnuts for a few minutes, add 60 gr of sugar, all the time stir, until the sugar has become caramelizing (this happens very quickly). A sheet of foil greased with vegetable oil and pour the "caramel" nuts on the foil. Let it cool down.
In the same saucepan pour the milk, add the semolina and 40 grams of sugar, cook porridge and put to cool (to speed up the process put the pot of porridge in a Cup of cold water, periodically stirring the porridge). Until everything cools down, divide the egg whites and yolks. Protein, beat with a pinch of salt until peaks, then add 25 grams of sugar and stir gently. To the yolk add 100 ml cream, mix. In the cooled porridge add a cream and the yolk mass beaten egg white and sugar, now all another good whisk and set before serving in the refrigerator.
When applying the cut or whole fruit (I had peaches), flummery, fruit and nuts stacked layers. The remaining 100 ml of cream until soft peaks, confectionery syringe to be deposited on the top of the pudding "roses" and garnish with nuts.
If desired (and available) you can even sprinkle the top chopped mint (along with nuts).
