Cake with dried apricots
Tender, crumbly, flavorful cake with dried apricots. Pretty simple and quick to prepare. A slice of this cake with a Cup of tea or coffee will be a wonderful end of lunch or dinner. Come on in, help yourself. It's delicious!

Ingredients

  • Flour

    200 g

  • Rice flour

    140 g

  • Butter

    200 g

  • Sugar

    40 g

  • Brown sugar

    40 g

  • Vanilla

    1 pack

  • Dried apricots

    200 g

  • Jam apricot

    4 Tbsp

  • Lemon juice

    2 Tbsp

  • Powdered sugar

Cooking

Apricots wash well and soak in warm water for an hour and a half. In advance, remove from refrigerator butter.

Cut apricots in small pieces. (the water in which was soaked dried apricots do not empty)

Put the apricots in a small saucepan, add apricot jam,100 ml of infusion and cook on medium heat until apricots soften, 10-12 minutes. (during this time the excess liquid evaporated)

Remove the saucepan from the heat, add the lemon juice and set aside aside.

The softened butter vzbit white with two types of sugar and vanilla. (for lack of brown sugar you can use regular white sugar,80 g)

Both types of flour sift and add to the butter with the sugar.

Knead the dough until smooth. (I first mixed everything with a mixer, and then gather the crumbs into a ball with your hands)

Divide the dough into two equal parts. One portion of the dough break it into pieces and put these pieces evenly in the baking dish. ( the size of the form 20*20*5 )

The second part of the test also break into pieces and spread on the filling. Bake the tart in a preheated to 180* oven for 30-35 minutes.
