Hot fish appetizer
Amazing hot fish appetizer on their menu Riga restaurant "Pie Kristapa"! I was made out of flounder, but perfect and sole, trout, or walleye.

Ingredients

  • Flounder

  • Mushrooms

    100 g

  • Onion

    1 piece

  • Cream

    300 ml

  • Flour

    1 Tbsp

  • Butter

    1 Tbsp

  • Nutmeg

    2 pinch

  • Soy sauce

    1 Tbsp

  • The mixture of peppers

  • Mustard

    1 Tbsp

  • Lemon

    0.333 piece

  • Champagne

    100 ml

  • Mozzarella

    70 g

  • Cheese

    50 g

These are the basic ingredients. Today I have 2 flounders weighing about 1100 grams. and frozen mushrooms.

Flounder cut into fillets. I left the skin and fins that the fish would not have collapsed when roasting.

To prepare the marinade. To do this, mix the grain mustard, champagne and lemon juice. Fish salt and pepper on all sides well to coat with marinade. I have the fish marinated for 4 hours.

Mushrooms /I have a frozen white, but there may be mushrooms/, fry with onions and add soy sauce TM "Kikkoman". Mozzarella cut into small cubes.

Fish to fry in vegetable oil until tender.

To release the fish from the skin and fins, put in molds in a circle. In the center to place fried mushrooms. Sprinkle with mozzarella cubes.

To make the sauce. Tablespoon of flour and fry in a tablespoon of butter, gradually add 10% cream, or rich milk, salt to taste and 2 pinches nutmeg. The mixture was continuously intensively stirred, boil down to desired thickness. Pour the sauce over the fish, sprinkle top with grated hard cheese.

Bake in the oven at t= 220°C for 10 minutes until Golden brown.

The appetizer turned out delicious, creamy-soft, melting in your mouth. Even the remnants of the sauce was faithfully picked up some bread, that my house is not found every day. I hope that my dish will appeal to You! The cooking time specified without taking into account the time spent on marinating fish.
