Eggplant caviar
This recipe was invented by my Granny. She was khokhlushka. And as you know, bats the gorgeous hostess! This delicious caviar I ate nothing!

Ingredients

  • Eggplant

    3 kg

  • Tomato juice

    1 l

  • Pepper

    7 piece

  • Onion

    10 piece

  • Carrots

    4 piece

  • Vegetable oil

    400 g

  • Chili

    2 piece

  • Salt

    3 Tbsp

Cooking

Boil eggplant in salted water until very soft.

Cool slightly and remove skin

Chop until smooth.

Carrot fry until cooked

Pepper fry until Golden brown

Fry the onions.

A lot of eggplant to put in a saucepan with a thick bottom and fry in vegetable oil while stirring for 20 minutes.

Hot pepper mix in the bowl of a blender or finely chop with a knife.

After adding the eggplant, all other vegetables, tomato juice and chopped chilli, season with salt and pepper and stir. Simmer on low heat for 40 minutes.

10 minutes until cooked eggs beat with a blender until smooth. Add Bay leaf and pepper to taste.

To lay eggs in sterile jars and sterilize 0.5 l, 15 minutes, 1 l - 30 min. Flip over and wrap until cool.
