Zucchini Ogonek
Spicy, delicious, summer appetizer. I was attracted by the fact that the zucchini are simmered in a light tomato sauce.

Ingredients

  • Zucchini

    1 kg

  • Tomato

    300 g

  • Vinegar

    2 Tbsp

  • Salt

    0.5 tsp

  • Sugar

    1 tsp

  • Olive oil

    2 Tbsp

  • Parsley

    3 Tbsp

  • Garlic

    4 tooth

  • Chili

    1 piece

Zucchini cut into slices with a thickness of 1/2 cm Tomato "blend" in blender.

In a saucepan mix the mashed tomatoes, salt, sugar, olive oil and balsamic vinegar. Bring mixture to a boil.

The zucchini in batches, in a row, put in a saucepan. Simmer 10 minutes over medium heat. So to cook all the zucchini.

Zucchini is ready to put in a deep bowl. Each row sprinkle chopped parsley with garlic and chili pepper. Tightly cover the pot and allow the zucchini to stand for several hours.

Serve the zucchini chilled. Tasty, sharp and spicy.
