Cooking
Mix olive oil and paprika, RUB meat, sprinkle with salt, marinade for at least 30 minutes.
Fry the meat on both sides until Golden brown over high heat.
Fried meat put on a baking tray, add the peeled garlic, put in oven, preheated to 160-180°C. the Meat bake for 25-30 minutes (I like meat rare (underdone) or longer until fully cooked. Garlic bake 20 minutes.
While baking the meat for the sauce. Mix the softened butter with the thyme and lemon zest.
Add roasted garlic (2-3 cloves) and mix well.
The sauce is ready put it in the fridge.

It turns out very tender potato (not "dubeet" in full cooling) mash with a light taste of garlic!
Remove cooked meat from oven, cover with foil and allow to stand for 10 minutes.
