Enchilada with beef and mushrooms
And Homemade tortilla. Very tasty, succulent dish of Mexican cuisine. Nothing complicated, but as will be happy with your loved ones!

Ingredients

  • Flour

  • Water

    70 ml

  • Minced meat

  • Mushrooms

  • Zira

    0.5 tsp

  • Salt

  • Tabasco

  • Cheese

  • Black pepper

  • Vegetable oil

Flour grind your fingers with cold butter, cut in pieces.

Gradually adding warm water, knead elastic dough. Water might need a little more or less.

Divide the dough into four parts, each roll out thinly into a pancake.

Each cake fry on both sides in a dry pan over medium heat. They are fried very quickly, in just 1-2 minutes. Will not overdo they should be slightly Golden. Finished cakes to put in a wet towel, to preserve the softness.

Add the beef, sliced mushrooms, salt, pepper, paprika and cumin. If you love spicy, you can still add a drop of Tabasco. Mix well.

Add 100 ml of tomato sauce and a little water, stir, reduce the heat and simmer 20 minutes.

The filling I got a little runny, not a lot of strained, broth retained. The filling spread on a tortilla, wrap the tortilla roll.

On the bottom of the form for baking pour a little tomato sauce, put the rolls, leftover tomato sauce mixed with broth and pour all of this mixture. Sprinkle to taste with grated cheese. Bake 15-20 minutes in a preheated to 200 gr. the oven.
