Bulgarian Lecho

Ingredients

  • Tomato

    2 kg

  • Pepper

    1.5 kg

  • Onion

    500 g

  • Carrots

    500 g

  • Vegetable oil

    1 cup

  • Sugar

    1 cup

  • Vinegar

    0.5 cup

  • Salt

    3 Tbsp

All the vegetables - peppers, carrots, onions – wash and clean

Tomatoes and onions mince ( I used the processor... beauty) and cook on slow heat for 1 hour, stirring occasionally.

Carrots grate on medium grater and sauté in butter for 10 minutes.

Then together with peppers, cut into strips, add to tomatoes. Add salt, sugar, vinegar and cook 15 minutes

Then put into sterilized jars, roll up, to turn upside down, wrap a blanket and leave until cool.
