I present to you the recipe of vegetable burgers with patties of chickpeas and mushrooms, for variety of vegetarian menu.

Cooking
The chickpeas soak in water for 4-5 hours, then change water and cook for 1.5-2 hours. I took the chickpeas TM "Mistral".
While cooking the chickpeas, vegetable bake buns for hamburgers. For this you need to dissolve in warm water the yeast with the sugar, add 1/3 of the flour, stir and put in a warm place for 15-20 minutes.
For the dough I used generic brown sugar TM "Mistral".
Next, add the vegetable oil, salt, the rest of the flour, knead the dough (the dough should not be very steep) and put in a warm place for 40-50 minutes.
The dough should increase 2 times.
Divide the dough into three equal pieces and form buns or even, say, a small pellet, height of ~ 1 cm (in the process of baking they will rise).
Grease with vegetable oil and sprinkle with sesame seeds.
Bake vegetable muffins at 180 degrees for 15-20 minutes.
Next, prepare the meatballs. Ready for this nut mince.
Mushrooms finely chop, garlic skip through the press.
Mushrooms lightly fry in vegetable oil with garlic.
Mushrooms add to the chopped chickpeas, season with salt, add seasonings to the meat squeeze the juice of half a lemon and mix well (if the meat will turn out a little dry, add a little water).
Stuffing divided into 3 parts and make round patties with a height of ~ 1 cm.
In a pan pour 1 tablespoon of vegetable oil and fry the meatballs on both sides. Fry on medium heat for 3-4 minutes each side.
Each muffin cut in half lengthwise.
On the sides of the rolls put the lettuce, tomato and mugs prepared chickpeas patties.
Put the second half of the rolls. Meatless burgers ready!
