Cooking
Peas grind in a blender or mill
Add spices, salt and soda.
Slowly pour the cold water and mix well to obtain a homogeneous dough. On density it should resemble pancake batter.

Pour oil in a pan, but rather in a small steel pot. Heat it over moderate heat to a temperature to cast into it a drop test immediately floated to the surface. Put the dough in a handful of vegetables to roll them so they are completely covered with batter one by one and put into the heated oil. Fry the pakoras on both sides until Golden crisp.
The pakoras are ready to lay out on paper towel to remove excess oil.
The pakoras are served as a snack with an Apple or tomato sauce.
