Roasted vegetables on the side
This spicy vegetable side dish I dedicate my vegan friend Diana (of Diana's Delicious)!!! Recipe long ago took Yulia Vysotskaya, only the ingredients changed a bit. Fast, easy, useful and tasty!!!

Ingredients

  • Beets

    500 g

  • Carrots

    500 g

  • Onion

    500 g

  • Cumin

    1 tsp

  • Coriander

    1 tsp

  • Vinegar

    3 tsp

  • Vegetable oil

    8 Tbsp

  • Salt

  • Black pepper

All that is needed. If someone doesn't like grilled onions, you can substitute potatoes, broccoli or cauliflower. The original was the cherry tomatoes. Wash and peel the vegetables, if large - cut into slices 1.5 cm

Dressing: mix oil, vinegar, coriander, cumin, salt, pepper.

Mix well the dressing with the vegetables. In the oven for 30 minutes at 200 degrees, then flip and another 30 minutes.

Produces delicious and healthy vegetables. Suitable as a side dish to meat, chicken, fish and as a separate dish.
