Melt the butter on low heat and mix with cracker crumbs, lemon juice and zest. Season with salt and pepper.

Grate the cucumbers using a coarse grater,squeeze the juice.

To release from the mold and place them on a dish.Mix the sour cream with mint and grease the terrine. Decorate with slices of cucumbers and mint leaves.
