Cooking
Peas fill with water in the evening and leave to swell overnight.
Then drain off on a sieve and washed with water. Put in a pan, pour water and bring to a boil. Cook after boiling for 30 minutes.
Dried mushrooms fill with water and allow to stand for 30 minutes to swell. Then pour water into a sieve, rinse with water.
Onions finely chop and passeruem in vegetable oil until transparent. For non-vegetarian version fry the onion with chopped bacon.
Then add grated carrot and smoked paprika. Stir and simmer for 2-3 minutes.
Add the peas and mushrooms, braised leeks with carrots and soy sauce. Bring to the boil and cook for about 30 minutes.
Then add chopped cabbage and cook for another 5 minutes.
Then put finely chopped dill, close the lid, turn off the gas and allow to infuse for about 5 minutes.
To prepare the soup, I used peas yellow split Idaho TM "Mistral".
