Ceviche of squid
The idea and the name of this recipe comes from renowned chef of one of Moscow cafes. Ceviche – a Latin American dish of raw fish or seafood marinated in citrus juice. Although in this case the squid is pre-cooked. This dish looks very impressive on the Christmas table. Seafood lovers should appreciate it.

Ingredients

  • Squid

    3 piece

  • Cucumber

    2 piece

  • Cherry tomatoes

    6 piece

  • Radishes

    6 piece

  • Soy sauce

    30 ml

  • Orange

    1 piece

  • Lemon

    1 piece

  • Oil, soybean

    2 Tbsp

  • Pepper pink

    1 tsp

  • Coriander

    1 tsp

  • Shrimp

    6 piece

  • Green onions

Cooking

Vegetables, my. Thin plates cut or grate using a grater Berner, cucumber, radish. The cherry tomatoes cut into 4 parts.

Make the dressing-marinade. Take soy sauce from Kikkoman.

Of orange and lemon squeezing the juice. Take coriander, pink pepper, olive oil.

Pink pepper and coriander, I grind.

Mix soy sauce, orange and lemon juice, olive oil and chopped coriander and pink pepper.

Pour the marinade vegetables, stir and leave to marinate for 10-15 minutes.

Squid clean and blanchere in boiling water for 1 minute. We need carcass without "ears", the cooled squid cut into thin rings. For this recipe you can use any seafood and a cocktail of them.

You can just serve the ceviche in a salad bowl. But on the Christmas table looks prettier portion feed in the glass. Take glasses, to half fill the pickled vegetables, put on top of sliced squid, pour the remaining marinade. Sprinkle top with green onion.
